Ingredients
1 tablespoon butter
1 cup diced shallots
3 sprigs fresh thyme, leaves removed
3 cups chopped carrots
2 cups chopped celery
2 teaspoons salt
3 frozen garlic cubes or fresh minced garlic
2 tablespoons flour
2 tablespoons dry white cooking wine
2 cups fat free or cashew milk
2 cups chicken broth, bone broth recommended
4 cups shredded rotisserie chicken breast
2 cups frozen peas
20 ounces steamed cauliflower blended with a small amount of broth

Instructions
1. Sauté the aromatics
In a heavy bottomed pot or deep skillet, melt the butter over medium high heat. Add the shallots and thyme. Cook for several minutes until softened and fragrant.
